This recipe is for all the brie lovers out there! I’m sure everyone has heard of baked brie–an awesome and sweet combination of brie, puff pastry, and your favorite fruit preserve or jelly. Well here we have a new, savory take on baked brie!
-About 8-12 oz (1/2 – 3/4 lb) of brie (for a strong flavor try Brie Fermier, for something milder ask for Brie Magnifique!) – Remove the rind and cube
-1 small jar (8oz or less) of sun-dried tomatoes, chopped into bite-size pieces
-1 clove of garlic (1/2 clove if using Brie Fermier!)
-3/4 tsp dry basil or rosemary
-Fresh cracked black pepper
1) Preheat your oven to 325*
2) In a small, oven safe dish (like a ramekin), layer the brie, sun-dried tomatoes, rosemary or basil and garlic until it reaches the top of the dish. Top with fresh cracked black pepper.
3) Bake for about 10-15 minutes, then give it a quick stir to combine everything. Bake for another 10 minutes or until melted and bubbly. Serve immediately with warm baguette slices or sturdy crackers.
**To reheat, pop back in the oven on 325* for 5-10 minutes, or microwave in 30 second intervals until gooey again.
