Big Blue Fondue

In honor of our local team, the NY Giants, reaching the playoffs, we have decided to dedicate this week to our “Big Blues.”  All week we will be bringing you some of our favorite blue cheeses and some awesome football friendly recipes to go with them! So to kick off this Big Blue spirit this week, we’ve come up with a fondue recipe just for you!

Ingredients:

-½ cup heavy cream

-½ cup dry white wine

-1 cup fresh blue cheese, cubed or crumbled (try Danish Blue or St. Agur Blue)

-1 cup cream cheese

-1 tsp thyme

-1 tsp fresh minced garlic

-1 tbsp butter

-Pepper to taste

1)      In a small pan over medium heat, cook the thyme, garlic, and butter together for about 2 minutes, being careful not to brown the garlic.

2)      Add the heavy cream and white wine. Bring to a simmer and reduce heat to low.

3)      Add cheeses and stir until all ingredients are combined and smooth.

4)      Add pepper to taste.

5)      Immediately place in a fondue set over low heat.

Serve with crusty bread, grilled chicken, or steak!

Check back tomorrow for more Big Blue fun!
