Happy Monday Turophiles! Hope everyone had a good weekend! Here is the “L” edition of our weekly Turophile Terms.

Lactic Acid is produced in the milk and curd during cheese making as a result of additional bacterial starter cultures being added.

Lactose is a natural sugar found in milk.

I’m going to let you in on a little secret of mine–I’m lactose intolerant! Yup, you read that right. I have lactose intolerance which is a condition where the digestive system cannot properly break down and digest the natural sugar in milk (lactose).  Lucky for me though, most cheeses that are aged over 60 days have very little to no lactose in them!  There are also medicines to help ease symptoms of lactose intolerance and special lactose free products! (*Please discuss with a doctor before taking any kinds of medicines*)
