YUM! If you love Meredith Dairy Marinated Feta, you’re going to LOVE this dip!
- 2 [7 oz] containers of Meredith Dairy Marinated Feta, drained of oil
- the saved oil from both containers of Meredith Dairy Marinated Feta
- 1/4 teaspoon lemon zest
- 1 teaspoon lemon juice
- additional thyme and garlic, chopped (*to taste)
- fresh cracked black pepper
Combine feta, lemon zest, and lemon juice in blender or food processor. Slowly add oil while blending until dip is smooth, but not overly oily. Add as little or as much black pepper as you like. Personally I LOVE to put a lot in this dip because it balances out the lemon and feta flavors well. The oil already contains herbs and garlic, however add additional chopped thyme and garlic to taste if needed.
