Pasta à la Oka

Are you looking for a new dinner and have a hunk of Oka sitting in your refrigerator?  Try this delicious Pasta à la Oka recipe! It’s sure to leave you wanting more!


  • 1 large wedge of Oka
  • 1 zucchini
  • 1 red onion
  • 1/2 eggplant
  • 1 red pepper (seeds removed)
  • 12 cherry tomatoes, halved
  • Penne or bow tie pasta
  • 3 cloves garlic
  • a few sprigs of rosemary
  • 3 tablespoons olive oil
  • 1/2 tablespoon chopped parsley
  • salt and pepper
  1. Preheat your oven to 400*
  2. Cut the zucchini, onion, eggplant, and red pepper into bite size pieces and arrange in a single layer on a baking sheet with rosemary sprigs throughout.  Mince the garlic and sprinkle over the layer.  Drizzle with 1 1/2 tablespoons of olive oil and season with salt and pepper to taste.
  3. Bake for about 15 minutes, then flip vegetables.  Add the tomatoes and continue to cook for another 5 minutes.  Remove sprigs of rosemary after baking.
  4. Make pasta according to package.  Drain and return to the pot. 
  5. Cube Oka into small pieces (the smaller, the faster it melts).
  6. Combine pasta, cheese, remaining olive oil, parsley, and vegetables in pot.  Toss well and place in serving dish.  Serve while still warm!
