You may remember last summer when we featured Beemster XO, a delicious 26-month Aged Gouda with rich, sharp, caramel and whiskey flavors. This month we are featuring another cheese by Beemster at the opposite end of the spectrum–Beemster Vlaskaas. Historically, Vlaskaas cheese was only made once a year to celebrate the flax harvest, and is among one of the oldest Gouda recipes. In 2004, Beemster recreated this recipe and since then Vlaskaas has won a number of awards. It is now produced year-round so you can enjoy it any time.
Vlaskaas is richer, creamier, and sweeter in flavor compared to the other Beemster Aged Goudas. It is a deeper yellow color compared to other Goudas, and not quite as crumbly as its fellow Beemster cheeses. Vlaskaas can be enjoyed with a variety of beers and white wines. In fact, there isn’t much that this cheese doesn’t pair well with. If I had to choose my favorite though, I’d go with WINE.
