Sitting on 50 beautiful acres in Thurman, New York just beneath Crane Mountain, Nettle Meadow Farm is a goat and sheep dairy and cheese company churning out delicious, handmade artisan cheeses. One of my favorites by them is Simply Sheep, a 100% sheep’s milk cheese. This small, 7-ounce round packs a lot of flavor–rich, earthy, and milky, with a subtle flavor of hay and grass. When you slice it in half, you find a beautiful, smooth cream line with a chalky center. The longer you let it ripen, the more gooey the cream line gets! This cheese pairs well with crisp apples or pears and 667 Monterey Pinot Noir.
