One of my main goals as a Vineyard Market Cheese Lead is to get you, the customer, to try something new and outside of your comfort zone. L’Affine au Chablis comes in a small, round, wooden box and immediately draws customer attention–until they lift the lid to discover a bright pink rind and a pungent smell permeating through the plastic. This is usually where I lose many customers. Like Langres, L’Affine au Chablis is an underappreciated cheese. Also like Langres, it is a washed-rind cheese, though L’Affine au Chablis originates from the Burgundy region of France. The cheese is washed in Chablis wine once a week during its aging period, which is what gives it the strong smell and bright rind. Though milder in flavor than Epoisse, L’Affine au Chablis has a full flavor, with hints of the Chablis on the finish. Let it sit out about an hour before serving and it will become smooth and gooey. Perfect to just spoon out onto a cracker (or straight to your mouth!). Pair with Domaine Bernard Defaix & Fils Premier Cru Cote de Lechet Chablis 2010 for a delicious treat!
