Personally my favorite is a feta burger, and in lieu of the ketchup, I use a Tzatziki sauce (greek yogurt, cucumber, lemon juice with added dill and lemon) and a slice of red onion really sets this off.
Among other favorites:
Reuben Burger – Emmental Swiss, fantastic with the Rothschild Horseradish Onion Spread and Sauerkraut.
Brie Burger – for this I take the rind side of the brie, lightly brush with canola oil, and grill it for a minute or two, then put it right on the burger.
Gorgonzola Stuffed Burger – take either Dolce or Piquante and while you are making your patties punch a hole out through the middle like a doughnut, insert a puck of cheese in its place and with a thin layer of beef, cover it up.
And lets face it, there are those times where good old fashion Cheddar trumps creativity, when your burgers are just about done on the grill, pile on some Tillamook (or Tickler) and close the top of the grill for about one minute–and just because you can, add bacon… lots.
