Continuing on with our featured creamery of Cowgirl Creamery in California comes St Pat. This small, mold-ripened, cow’s milk cheese is very similar in style to Mt Tam, with one striking difference–it is wrapped in stinging Nettle leaves to produce a beautiful moss-green and white colored rind. Don’t worry though, the Nettles have been frozen to remove the sting! Only produced during the spring and early summer when Nettles are in season, St Pat is rich, sweet, and nutty in flavor. The Nettle leaves give it a vegetable flavor reminiscent of artichokes, with a slightly smokey finish. It gives off delicious, herbaceous aromas that instantly transports you to a picnic in the countryside. Pair with Smythe & Renfield Sauvignon Blanc for a scrumptious treat.
