For this month’s Cheese of the Month, we are bringing you an old favorite with a new name. After Beemster’s extensive research with consumers, the cheese formerly known as Beemster XO has been renamed and rebranded, along with a few of their other cheeses. The new name and simpler label don’t change the fact that this cheese is delicious!
Extra Aged is aged for 26 months, allowing the cheese to develop a robust butterscotch, rich caramel, and nutty flavors with a whiskey flavored finish. It is sharp and crumbly while still maintaining a smooth and creamy mouthfeel–something many other extra aged Dutch Goudas cannot obtain.
