The sophisticated palates behind Bottle King’s Vineyard Market are often on the look out for cheeses that will expand our customers’ horizons. We’ve been wanting to bring in some Portuguese cheeses for quite some time and we’ve finally settled on one exclusively for our Ramsey location. Amarello is a D.O.P. Portuguese cheese made of a blend of raw goat and sheep’s milk. It is aged a minimum of 60 days, and has a semi-firm, spongy, yellowish paste that softens more when it comes to room temperature. Buttery, rich, and almost sweet, Amarello also sneaks in notes of artichoke and lavender with a lemony finish. Some have described it as pleasantly strong, but I found it to be lighter than expected.
You can pair Amarello with meaty seafood dishes, or fruits such as grapes, plums, and cherries. Because this is a blended milk cheese, it can pair well with a wide variety of wines. Personally I found it to pair beautifully with my favorite wine, Mark West Pinot Noir. Amarello can currently be found exclusively at the Ramsey Bottle King Vineyard Market.
